Trendy Canadian brunch chain doubles down on San Antonio

Pür & Simple is opening a second location near UTSA.
With barely a year under its belt, Pür & Simple is doubling down on San Antonio. The Montreal-based brunch chain is opening a second location at 5730 UTSA Blvd in the ambitious Merc development.
The concept made its Alamo City debut in July 2025 at 20821 US Highway 281 N in Stone Oak. Since then, it has become a popular neighborhood haunt for Benedicts, fluffy pancakes, and, naturally, poutine.
Pür & Simple is part of the breakfast boom that has swept North America over the past decade, fueling the growth of concepts like Snooze A.M. Eatery and First Watch. The chain serves a vast menu of morning standbys from hash browns loaded with bacon, cheese, and peppers to delicate crepes stuffed with strawberries, bananas, and hazelnut-chocolate spread.
The diner sets itself apart from the competition with a few inventive twists. Waffles are breaded in panko bread crumbs for extra crunch, and Canada’s famous poutine is revamped into a brunch dish with three meats and hollandaise. Sadly, cretons, the rillette-like Québécois classic, is not on the menu — but here’s hoping for specials.
Mimosas and Bloody Marys are a given, but Pür & Simple also caters to its Alamo City audience with a pair of margaritas. Teetotalers can opt for mocktails like a lemon lavender fizz or popular espresso drinks like caramel cappuccinos. Fruity smoothies will likely be a hit with kids.
The chain was founded in 2016, quickly expanding to over 50 locations in a decade. It’s unclear if local franchiser Rafael Mendible, who introduced the concept to San Antonio, is involved in this project.
Pür & Simple is among the first tenants announced at the upcoming live-work development near the University of Texas at San Antonio campus. If state regulatory construction timelines stay accurate, the breakfast joint will join Hawaiian Bros. Island Grill and Park Golf in winter 2026-2027.
