Dallas' most acclaimed cocktail bar is popping up in San Antonio

Dallas' Midnight Rambler is known for its luxe ambience and creative cocktails.
It feels like the Wonder Twins are activating. Midnight Rambler, the award-winning Dallas bar, is teaming up with Sternewirth for a one-night-only takeover on Tuesday, November 18, combining the forces of two of Texas’ poshest properties — Hotel Emma and The Joule.
New York City bar vets Christy Pope and Chad Solomon founded Midnight Rambler in 2014 in the basement of the Joule, a ritzy boutique hotel in Dallas’ Central Business District. Since then, it has grown to become one of the most celebrated bars in the U.S.
Most recently, the watering hole snagged a pair of nominations from Tales of the Cocktail’s coveted Spirited Awards. The annual gathering of bar professionals named it a top 10 honoree among regional hotel bars, giving a second shout-out for the bar team.
After Midnight Rambler shuttered during the COVID-19 era, the bar reset, bringing in Gabe Sanchez to expand the cocktail program. The legendary barman has a long career in high-end Las Vegas nightclubs and ran one of Dallas’ most missed bars, Black Swan Saloon, for 10 years.
Sanchez’s one-off menu features creative concoctions made with Suntory spirits and Maker’s Mark whiskies:
- Roadside BBQ Manhattan — Bourbon, Cocchi Vermouth di Torino infused with Terry Black’s brisket burnt ends, lemon oil slick
- Jim, James, Paul & Tyrone — Toki Japanese whiskey, sour pineapple, Chicha Morada, apple cider, demerara, egg white
- Strawberry Supreme — Maker’s Mark, lemon, ginger, strawberry ice cube
- Low-Hanging Fruit — El Tesoro Blanco tequila, blanc vermouth, fall veggie cordial,cold brew yaupon tea
- Old Faithful — Maker’s Mark 46, Lone Star beer
The Midnight Rambler pop-up, held between 5-10 pm, will be one night only. Both hotel guests and locals are welcome to attend, and neither a cover nor reservations are required. Visitors will be catered to on a first-come, first-served basis.
