Late-night cookie chain sets sights on downtown San Antonio

Insomnia Cookies is opening a new bakery in downtown San Antonio.
San Antonio night owls are getting a new reason to stay up late. Insomnia Cookies, the popular national chain known for delivering warm treats until 3 am, is opening its first downtown bakery at 122 E Houston St. #104, according to a recent state filing.
The rapidly growing brand usually pops up around college campuses and other late-night hubs. One of San Antonio’s two outposts is near the University of Texas at San Antonio Campus, while the other is a short jaunt from University and Methodist Hospitals.
While Insomnia’s warm cookie delivery downtown will no doubt be popular with folks who want to give their divorce lawyer a thank-you gift, the company likely chose it for heavy foot traffic. The Houston Street outpost will position it near other touristy sweet shops on the downtown strip, like Voodoo Doughnut and Cookie Plug.
Although flavors vary by store, Insomnia customers can find classic cookie flavors like chocolate chunk, Snickerdoodle, and s'mores mixed in with a few vegan and gluten-free options. To keep customers coming back, it also rolls out seasonal specials like the current Cinnamon Dolce cookie with a cream cheese filling.
The cookies are available individually or in party packs that can give up to 100 office workers a sugar rush. If plain cookies aren’t your thing (you ghoul), Insomnia also sells brownies, ice cream sandwiches, and cookie cakes.
Insomnia did not return a request for more information by publication time. Texas Department of Licensing and Regulation project details say the 1,329-square-foot shop will finish renovations of the former 18/8 salon by January 2026. State filings are subject to change and are rarely an indication of the actual opening date.
