Storied Sítio El Tropicano unveils star San Antonio culinary team
Sítio El Tropicano will soon bring midcentury glamor back to the storied hotel.
Downtown San Antonio’s long-vacant El Tropicano might soon be luring jetsetters again. The landmark River Walk hotel, now Sítio El Tropicano, has drafted some star talent to lead its food and beverage program: Austin's Emmer & Rye Hospitality Group.
Emmer & Rye is no stranger to creating destinations. After opening several acclaimed restaurants in the Capital City, the group — led by partners Kevin Fink, Tavel Bristol-Joseph, Alicynn Fink, and Rand Egbert — shook up Pearl with Ladino, Henbit, and Pullman Market. The concepts soon collected some serious plaudits, from Michelin stars to a James Beard finalist nod for Bristol-Joseph in the Outstanding Pastry Chef or Baker category.
Although details are still slim, the group will run three concepts at Sítio El Tropicano: a lobby café and provisions shop, a signature all-day restaurant, and a poolside spot serving cocktails and bites. Emmer & Rye will also handle food and beverage for the hotel's 16,000 square feet of event space.

Whatever the fare, Emmer & Rye can draw plenty of inspiration from the property’s storied past. The city’s first River Walk hotel opened in 1962 and spent its heyday hosting the likes of The Who, Dolly Parton, the Rolling Stones, and Julie Andrews. Lyndon B. Johnson visited it often enough that it earned the nickname the "Texas White House."
After years of limbo, El Tropicano was purchased in January 2024 by a consortium including developer Trestle Studio, which is overseeing a restoration that draws on the work of Brazilian landscape modernist Roberto Burle Marx. In addition to the restaurants, the site will have meeting space, a spa, and what it is touting as the city’s largest pool deck.
"San Antonio is such a special city, and seeing this historic property come back to life is incredibly exciting," said Egbert, the group's partner and chief development officer, in a release. "We look forward to bringing all-day dining and a vibrant sense of community back to this space."
And some San Antonio creatives will have even more access. On Thursday, June 25, the hotel opened applications for its exclusive Sítio Club. Perks include members-only spaces over the River Walk; priority cabana, dining, and spa reservations; room upgrades; and a calendar of seasonal programming. Members will also get to preen at the Flamingo Bar, a cocktail spot in the space that once housed the hotel's pink-feathered flock.

Planners say they are on track for a late 2026 opening, but there’s still plenty of work to be done. During a June 24 site visit, much of the aesthetic work was yet to be completed, although a model guest room with palm tree views teased its tropical-modernist vibe. Finished or not, Sítio is now confident enough to open up reservations.
