Venetian pasta-in-a-box chain to open first San Antonio restaurant

Dalmoros Fresh Italian is coming to San Antonio.
A buzzy Venetian chain is noodling on San Antonio. Dalmoros Fresh Italian, known for dishing up housemade fettuccine and rigatoni in Chinese takeout-style boxes, will open its first Alamo City restaurant inside the Walmart Supercenter at 1515 N Loop 1604 E.
Dalmoros was founded by chef Gabriele Dal Moro in 2012, serving fresh pasta in a fast-casual environment. Unlike Italian-American chains like Fazoli’s, it does not rely on batch-cooked dried noodles. Instead, fresh dough is extruded and boiled to order, keeping the classic al dente texture.
Once diners pick the pasta, it can be dressed with eight different sauces (plus a rotating monthly special) ranging from pesto to meaty Bolognese to tomatoey Napoletana. There are a few nods to American tastes — the cacio e pepe is made with a cream sauce instead of the traditional emulsified cooking water.
After that step, the pastas can be topped with proteins like seasoned chicken and meatballs, cheeses, and veggies like green olives, mushrooms, and sundried tomatoes. Again, there are a few variations between the domestic and international menus. Global markets get thick-cut guanciale, while the U.S. gets the more familiar strip bacon.
Dalmoros also serves panini, a relatively new menu item for the U.S. The sandwiches come in chicken pesto, meatball, mortadella, and vegetarian Caprese. Desserts include fan-favorite tiramisu and lemon sorbetto.
The chain has yet to announce a timeframe for the first San Antonio location, but U.S. franchisee David Caruso has previously told trade publication QSR that he was eyeing the San Antonio area. A recent Texas Department of Licensing and Regulation filing estimates that construction will finish in November. A request for more information from the company was not immediately returned.
