Netflix star chef debuts new San Antonio bar and restaurant

From helming a Michelin-starred restaurant when he was only 25 to starring on Netflix's The Final Table to opening a restaurant in Edinburg, chef Graham Campbell has never taken a conventional path. His latest stop is Castlehill, now open at 5138 UTSA Blvd.
Campbell first gained fame when he was named the executive chef of the Ballachulish Country House Hotel in Fort William, Scotland. During his tenure, the property’s restaurant received Michelin recognition, making Campbell one of the youngest chefs to head a starred restaurant.
He was still in the United Kingdom when he appeared on Netflix’s culinary competition, paired up with a New York chef who eventually made the leap to San Antonio, Aaron Bludorn. Although he didn’t score a win, The Final Table did spark a life change. According to The Edinburgh Advocate, the connections gained during filming eventually led him to South Texas, where he opened the first iteration of Castlehill in 2023.
Both the Edinburg original and its San Antonio sequel might be a surprise to those who only know him from television. In Scotland, Campbell was known for nouvelle cuisine like chilled pea velouté with fennel sorbet and poached apricots. In Texas, he is cooking a far more approachable menu.
Highlights include classic salads like Waldorf and Caesar, a burger served with bacon and a truffle slaw, and chicken wings served in a variety of sauces. He does leave room for some chef-y flourishes, however. The seafood mac ‘n’ cheese is served in a lobster emulsion.
“A memorable meal isn’t defined by what’s on the plate—it’s defined by the moments, the company, and the way it makes you feel,” he wrote in an opening announcement.
Some of what makes Castlehill memorable is in the restaurant’s layout itself. In a sort of reverse speakeasy arrangement, the concept opens to a bar and lounge. A bookcase “hidden” door leads to a dining area dubbed the Highland with a full view of the open kitchen.
Castlehill is now open Monday through Wednesday, 4-10 pm; Thursday through Saturday, 11 am-10 pm; and Sunday, 11 am-6 pm. The bar stays open until midnight on Thursdays through Saturdays.
