San Antonio culinary star turns up the heat on Hell’s Kitchen

Anaiya Marie of Biga on the Banks is the latest San Antonian to compete on Hell's Kitchen.
A young San Antonio chef will soon find out if she can stand the heat of Hell’s Kitchen. Anaiya Marie of Biga on the Banks will be competing in the latest season of Gordon Ramsey’s hit Fox cooking competition show, debuting September 25 at 7 pm and streaming the following day on Hulu.
This year’s theme is "Battle of the States." Ramsey narrowed down a crowded field of 50 U.S. chefs to 20 competitors. Although Marie now cooks in Texas, she will be representing her birth state of Delaware. Henry Johnson, a chef at Dallas’ Evelyn, nabbed the Lone Star slot.
According to a release, Marie, 24, first fell in love with food in the Blue Hen State, tasting her grandmother’s holiday meals. After studying at Johnson & Wales University in Charlotte, NC, her culinary career took her to some of the nation’s top restaurants, including the storied Commander’s Palace in New Orleans.
After working as a sous chef at Jason Dady’s Range, she landed at Biga on the Banks. Chef Bruce Auden, San Antonio’s first James Beard Award nominee, promoted her to sous chef in 2024.
Marie will showcase her unique blend of home-style and global cooking on the show — an approach she calls “elevated soul food.” The approach melds well with the menu at the River Walk’s Biga, which includes everything from foie gras to a simple bread service.
“I love the experience of working at Biga and learning under Chef Bruce Auden, whose leadership and creativity continue to inspire me every day,” she says via the release.
Although not leaving anytime soon, Marie eventually hopes to leverage her experience into a private chef career, creating exclusive dining experiences and catering.
During her high-stakes run on the show, the chef will try to impress the notoriously temperamental Ramsey for a chance to win the head chef position at Foxwoods Resort Casino and a $250,000 prize. Although the series has already been filmed, she is keeping mum about her progress for now.
“Hell’s Kitchen is a unique experience. I had the most fun while simultaneously losing my mind, all while being around some amazing chefs,” said Marie in a statement. “That’s the fun about cooking, so if I had the chance, I would do it a million times over.”
