New Stone Oak shopping center lures 3 favorite chains to San Antonio

Crust Pizza Co. specializes in Chicago-style thin-crust pies.
A new far north-central San Antonio development is set to bring three quick-service restaurants to the city. Stone Oak Mercantile will feature the Alamo City’s first Crust Pizza Co., known for its tavern-style pies, along with new locations for Chick-fil-A and Black Rock Coffee.
The 57,673-square-foot project at Stone Oak Parkway and Canyon Golf Road will feature a central two-story promenade anchored by three pad sites. According to project details from Fulcrum Development, the center is expected to be tenant-ready for the end of summer 2025, although individual openings will vary.
Crust Pizza has been rapidly expanding in Texas and Louisiana since opening its first pizzeria in The Woodlands in 2011. It specializes in Chicago-style thin-crust pies, a style that is more popular in Illinois city than iconic deep-dish pizzas. Featuring a cracker-like crust and square slices, also known as the “party cut,” the style is wildly popular in area bars and neighborhood restaurants.
With pizza and calzone flavors like Hawaiian, Buffalo chicken, and the meaty Big Don’s, Crust doesn’t exactly break the mold. But it does serve perennial favorites like wings, meatballs, and pepperoni rolls, plus a few surprises like tomato basil soup and baked mac ‘n’ cheese with Italian sausage.
Although Crust’s corporate website lists the pizzeria as “coming soon,” it has yet to share an exact opening timeframe beyond late 2025. The company is also working on a Cibolo location at 813 Cibolo Valley #170.

Chick-fil-A, of course, needs no introduction. The Atlanta-based chain has a cult following throughout the South. The chain’s restaurant locator lists two outposts near Stone Oak, but so far, only Fulcrum Development’s brochure is spilling the beans on its debut.
There is a tad more information on Black Rock Coffee, a Scottsdale, Arizona franchise that made its San Antonio introduction in the summer of 2022. Not to be confused with the more controversial Black Rifle Coffee, the coffee bar serves a variety of espresso and blended drinks with an unexpected array of syrups, including grapefruit, kiwi, and lavender.
According to Texas Department of Licensing and Regulation filings, the Stone Oak Black Rock will begin construction in August with hopes of finishing in November.
Stone Oak Mercantile will also include various retail outlets and services, including a veterinary office and a dentist.
