Swanky Hill Country H-E-B fires up new True Texas BBQ joint

The True Texas BBQ will be Boerne's first.
Boerne is about to get its first taste of True Texas BBQ. According to a new state regulatory filing, H-E-B is renovating its upscale Fair Oaks store at 29388 IH 10 W to add a 4,465 square foot new outpost of the lauded barbecue chain.
In 2019, Texas Monthly Barbecue Editor Daniel Vaughn surprised many by calling the restaurant the “best barbecue chain in Texas.” Although he followed up in 2023 to say the quality was slipping, True Texas still remains a go-to spot for locals who need a barbecue fix without the long lines.
The H-E-B-owned chain is known for its classic barbecue menu featuring meats like brisket, pulled pork, ribs, and turkey breast served with Southern-style sides like mac ‘n’ cheese, apple slaw, collard greens, and potato salad. For quick meals, the joint also offers loadable snacks like brisket nachos and barbecue-stuffed baked potatoes.
It also has a few Tex-Mex surprises like a poblano queso sausage link and cinnamon churro pudding. This month, it’s capitalizing on the birria craze with a ramen bowl swimming in consome.
The Fair Oaks H-E-B store first debuted in March 2024, offering its neighbors in the luxe Lemon Creek Ranch community amenities like a pharmacy, large grab-and-go section, and a stocked bakery. The store was also stocked with gourmet foods and drinks for its high-earning clientele, including prime cuts of beef, a Central Market-caliber cheese section, and a wine selection with $1000-plus bottles.
H-E-B has not set an opening date for the new True Texas BBQ yet, but state records estimate the buildout will be completed by September. As with any large-scale projects, those estimates should be taken with a grain of salt.
