Spurs draft famous San Antonio chef for new La Cantera restaurant
One of the most recognizable names in San Antonio hospitality is hoping his latest project will be a slam dunk. Chef Jason Dady is playing ball with the Spurs to open a new restaurant at The Rock at La Cantera, the team’s multi-million dollar training facility.
According to a release, Roca & Martillo will open to the public in spring 2024. The name, translating to “rock and hammer,” pays homage to the campus name and the Spurs’ slogan, “pounding the rock.” Once operational, the restaurant will feature indoor and outdoor dining options, plus a rooftop patio experience with views of the campus.
The concept will explore Tuscan-Italian fare, a familiar territory for Dady. The prolific chef will incorporate contemporary American ingredients and smokiness into the dishes, nodding to the flavors of South Texas.
Guests can expect housemade pasta, wood-fired flatbreads, and marinated steaks. Signature dishes include Bourbon honey-glazed bobwhite quail with charred onion jus and wheat grain risotto, and a smoked brisket lasagna.
“We’re passionate about highlighting local talent and flavors in celebration of our community, and under Chef Dady’s direction, Roca & Martillo will be a leading example of the culinary excellence that San Antonio has to offer," said Joe Loomis, Senior Vice President of Finance, Technology & Culinary Operations at Spurs Sports & Entertainment, via a release.
Roca & Martillo is the second collaboration announced this season between the Spurs and the Jason Dady Restaurant Group. In October, the Frost Bank Center announced Dady’s Shuck Shack and Two Bros. BBQ were among the food concepts being added to the newly renamed arena.
