Texas-themed eatery ropes San Antonio for latest location
One thing about Texas hospitality group FB Society: It knows how to create a vibe. Having previously brought a neighborhood tavern feel with Whiskey Cake and Southern hospitality with Ida Claire, the Dallas-based group is now headed to the ranch with its latest local project, Haywire, opening this fall at 15900 La Cantera Pkwy.
Though it operates almost as many concepts as its North Dallas compatriot, Darden Restaurants, FB Society takes a more individual approach. Haywire currently has three locations scattered in Houston and the Dallas area, but the San Antonio outpost will have its own identity.
Keeping with its Texas theme, the atmosphere pays homage to its home state. The renderings contrast rough-hewn wood, leather chairs, and Mexican-style textiles with elegant crystal chandeliers. The walls will boast Texas ephemera and artwork, including works by local favorite multimedia artist Jonathan Shepherd.
The food, under the direction of chef de cuisine Abel Sanchez, has the same tension of rusticity and refinement. Hearty dishes like lump crab, tomahawk ribeye, and elk tacos draw inspiration from the state's many foodways with ingredients sourced from regional farms and ranches.
The locavore ethos extends to a drink program focused on whiskey and wine. Although the location will have a dedicated wine room with international vintages and a spirit list filled with coveted bottles, it will also bring in selections from throughout the state.
As previously reported by CultureMap, Haywire is a high-volume concept. Once the build is finished, Haywire will feature 16,000 square feet of dining space on multiple tiers — providing capacity for 400 guests. Like its sibling eatery Ida Claire, it will also have private space, including a decked-out Airstream trailer for intimate gatherings.
"San Antonio is one of the most visited cities in Texas, with attractions like the Alamo and River Walk drawing in people from all over," sums up managing partner Zach Harris via a release. "Haywire will be a perfect spot for locals, tourists, and even UTSA students to enjoy a dining experience that captures the heart of Texas hospitality."
