Project Pollo founder opens new fast-casual restaurant in San Antonio

Evo offers wraps, salads, bowls, and other dishes aimed at simplicity with quality ingredients.
San Antonio entrepreneur Lucas Bradbury made an announcement in the San Antonio Restaurants Facebook group on February 5 that his new fast-casual venture, Evo, would be opening the following day.
San Antonians likely know him as the founder of Project Pollo, a popular vegan "chicken" restaurant that was acquired and closed by a national group, except for one location in Austin that eventually followed suit. Two years after launching Project Pollo, he appeared on Shark Tank, giving the concept a big boost in attention. Bradbury also previously worked as a partner at the plant-based fast food chain Earth Burger, and the new Evo concept is taking over a former Earth Burger location at 2501 Nacogdoches Rd.
It looks like Bradbury intends to continue pursuing the franchising business model, with a "locations" page already set up on the website with just one address listed so far.
Like Bradbury's other concepts, this one has focuses in sustainability and special diets, promising no fryers, seed oils, high-fructose corn syrup, or artificial preservatives and additives. The website discusses partnering with local farmers, schools, and food banks, while reducing waste in packaging, using renewable energy, and other broad commitments.
This time, it's not a fully vegan or vegetarian concept, but there are some plant-based options.
The menu is fairly compact with more variations available in each of the categories. It's mostly made up of fresh salads like a Caesar, a Cobb, or a build-your-own option; a mostly Mediterranean bowls and wraps section, and some sourdough pizzas. There's also an eclectic breakfast section that gathers items that would fit in all of the previous sections, plus bacon egg bites.
The beverage list includes two smoothies, tea, lemonade, and sodas by Boylan Bottling Company, an independently owned company that uses cane sugar as its sweetener.
Evo will also offer three catering options for wraps, salads, and a build-your-own bowl station.
According to Google Maps, hours are 11 am to 9 pm Thursdays through Tuesdays, and 11 am to 4:30 pm Wednesdays.
