Celebrated Carnitas Lonja chef returns with new San Antonio taquería

Tacopolis is now open in the Deco District.
One of San Antonio’s most celebrated chefs is back on the scene with a new taquería: Alejandro Paredes, who skyrocketed to national acclaim with Carnitas Lonja, debuted his new no-frills restaurant, Tacopolis, at 1604 Fredericksburg Rd. with a soft opening on July 11.
Unlike its predecessor, Tacopolis offers more than one type of meat. In addition to carnitas, guests can order tacos and quesadillas stuffed with pollo, chorizo, carne asada, birria, chuleta (pork chop), or champiñón (mushroom).
Alambres (a cheesy stir-fry with onions and bell peppers) and costras (griddled cheese shells) round off the hyper-focused menu, which can be spiked with a fiery salsa verde should diners need a kick. A trio of $4 sides, beans, guacamole, and a spring onion and potato medley, make the mains a meal.
The tiny dining room takes a similarly minimalist approach, ditching busy walls for plywood panels and two-toned stripes wrapped around the wall. The patio dining area has a little more color thanks to a vibrant mural of desert flora.
Paredes has largely been out of the public eye since December 2023, when he made the shocking decision to close Carnitas Lonja and sibling restaurant Fish Lonja. Both were widely considered among San Antonio’s best restaurants, earning accolades from the James Beard Foundation, Esquire magazine, Eater, and the New York Times.
Following last weekend’s sneak peek, Tacopolis is now open for regular business. Hours are Wednesday through Saturday, 11 am-10 pm, and Sunday, 11 am-3 pm.
