New 'Fresh-Mex' burrito restaurant unwraps first San Antonio location
First it was national chains like Chipotle and Freebird’s World Burrito, then build-your-own pizza joints took San Antonio by storm. Now a fresher take on the original assembly line burrito concept just may be the Alamo City’s top fast-casual trend for 2019.
Following in the footsteps of the recently opened Cabo Bob’s, another “Fresh-Mex” chain has zeroed in on San Antonio for its latest location. On July 24, Houston-based hospitality group Williston Holding Company announced via release it was opening Überrito at the corner of Interstate 10 and De Zavala Road by late summer.
The company, best known for its Casa Olé brand, currently runs five Überrito locations in Houston and one in Phoenix. The first local outpost will be run by local operator SNL Franchise Development.
Similar to Chipotle, Überrito lets diners build their own burrito, bowl, salad, or nachos from a variety of fillings. Though not exactly a health food restaurant (the concept doesn’t shy away from more fatty proteins like beer-battered cod and ground beef), there is an emphasis on lighter ingredients like grilled shrimp, chicken, and a vegan take on traditional picadillo.
The vegetable selection is much broader than similar concepts. Überitto offers a garden of possibilities, including sautéed mushrooms, sliced avocado, diced tomatoes, jicama slaw, and roasted corn. Eight salsas are available, ranging from a demure pico de gallo to a scorching habanero.
In addition to the burritos, Überrito offers a slim selection of sides like chips and guacamole, tortilla soup, and cookies. For drinks, guests can expect nonalcoholic options like flavored teas and soft drinks.
Though Williston currently does not operate any other San Antonio restaurants, the release teased that that won’t be the case for long.
"Überrito’s unique Fresh Mex concept continues to be appreciated by consumers, and we’re excited to bring the first Überrito location to San Antonio,” said SNL Franchise Development partner Aniq Lakhpaty in the release. “Expanding the restaurant throughout Texas is a huge opportunity for SNL, and this new location helps set the stage for additional locations to come.”
