Shuttered pizzeria returns for residency at popular San Antonio bar
The owner of Truth Pizzeria os now slinging pies at Gimme Gimme.
After a three-year hiatus, one of San Antonio’s best pizzaiolos is back on the scene. Gimme Gimme owner Aaron Peña says that John Winkler — the former proprietor of Truth Pizzeria — will be slinging pies out of the Southtown bar’s kitchen beginning Friday, September 4.
In an Instagram post, Peña shared his long history of working with his “old bud.” The pair first met 13 years ago while both working at Steve and Jody Bailey Newman’s now-defunct Alamo Street Eat Bar. Later, under the name Sulla Strada, Winkler ran the resident food truck at Pena’s much-missed St. Mary’s Strip bar Squeezebox.
Winkler opened Truth, his first brick-and-mortar, at 1602 E Houston St in 2020. After a brief run, the pizzeria bid arrivederci to San Antonio in 2022. Throughout the time, Pena remained among the spot’s most enthusiastic supporters.
"This man's pie will forever have a top spot in my book,” he wrote in a 2020 Facebook post.
Winkler is best known for his Neapolitan-style pizzas. Truth originally only offered a handful of pies, though they were customizable: white, Margherita, vegetable, and pepperoni. It’s unclear whether the core four will return to Gimme Gimme, but fans can expect a similar Crust. Pena says that he had bought a special pizza oven for the job.
The pizza will be available Thursdays through Sundays, but Pena is still working on the hours. That gives two open days for popular promotions like dollar wing Mondays and the ever-popular Wednesday steak night.
