San Antonio brick oven pizza joint fires up new North Side restaurant

Stout's is opening a new express concept on the North Side.
San Antonio brick-oven pizza joint Stout's is firing up a new location in the city's booming Far North Side. A leasing plan shared by developer Dominion Advisory Group shows the local mini-chain has signed on to be the first tenant in the upcoming Encino Commons development at 21114 US Hwy. 281.
The plan lists the restaurant as simply "Stout's." Founder Jason Stout runs two concepts under the name: Stout's Pizza Co. and the upscale Stout's Signature. The company did not return requests for more information on the site, but a Dominion broker says the company will be trying out a new "express model."
The only other details are on the blueprint. The eatery is in a 1,758-square-foot space and will include a small patio.
Stout's Pizza Co. debuted in 2011 at the Northwoods Shopping Center, selling gourmet pizzas like the Pig & Pear with prosciutto, truffle oil, and buffalo mozzarella. It has since grown to three locations, two in San Antonio and one in New Braunfels.
In 2022, the chain briefly expanded to East Austin. That venture, which included a streetside window, was shortlived, closing in less than six months.
The company extended the brand to Fredericksburg in 2015 with Stout's Signature, originally known as Stout's Trattoria at Grape Creek Vineyards. A second location near downtown's Tobin Center for the Performing Arts followed in 2021, and a third location — dubbed Stout's at the Shore — opened June 4 in Port Aransas, according to a release.
The new restaurant kept the pizzeria chain's popular pizzas, adding high-end entrees like filet mignon, pistachio-crusted lamb chops, and redfish risotto. The second outpost's proximity to the downtown arts scene made it a popular haunt for pre-show cocktails.
Stout's has not released a timeline for the newest opening, but the Dominion project update says the 21,000-square-foot shopping center will arrive in the fourth quarter of 2025. Three drive-thru restaurants have been leased, but the names were not included in the plans.
