San Antonio Mexican restaurant takes break after short Southtown run

Nixtamali Molino & Comedor says it is evolving its concept.
Less than two years after opening, San Antonio’s Nixtamali Molino + Comedor is taking a break. The Southtown Mexican restaurant, located at 728 S. Presa St., quietly announced the momentary closure by updating its Instagram and Facebook bios.
“Temporarily closed as we evolve our concept,” wrote the concept on social media. “We’re working on something new. Thank you for being part of the journey.”
David Zuazua opened Nixtamali in June 2020, taking over the former home of Southtown Pizzeria. The large menu focused on contemporary renditions of pre-Hispanic foods.
As the restaurant’s name implies, the restaurant used nixtamalized corn in many of its dishes. The ancient Mesoamerican process, largely disused since industrialization, prepares corn for eating by soaking and cooking it in an alkaline solution, typically lime water.
Nixtamali used the processed corn in a variety of dishes like a Michoacán-style gordita stuffed with chorizo, octopus tostadas, and a Oaxacan tamal served over tomato caldillo and refried beans. The entrees were less maize-forward with options like cochinita pibil, Delmonico steak, and a hamburger served with fresh guacamole.
Although initially focused on the food, the concept increasingly emphasized a social atmosphere in recent months. It began posting cocktail photos more frequently and advertised themed nights like retro deejay nights and karaoke accompanied by a live mariachi band.
It's unclear exactly when Nixtamali shuttered. Other than the bio update, the Southtown eatery has not issued a formal statement about the closure, and its channels have been dark since late November 2025. A request for more information on the concept change and reopening was not returned in time for publication. CultureMap will update this article should the restaurant respond.
