San Antonio's first Kimpton hotel schools the city with 4 hospitality concepts
The cabanas at Plaza San Antonio’s pool are already swimming with customers. InterContinental San Antonio Riverwalk rapidly rises downtown. Even the long dormant El Tropicano waits to be given new life. In Alamo City, 2024 is definitely the year of the hotel.
Now, another upcoming project has revealed details ahead of its summer debut. After teasing its hospitality concepts in July 2023, Kimpton Santo revealed the full details of its food and beverage program via a June 25 release. It’s a lot to take in.
The starring role goes to Dean’s Steak & Seafood, anchoring the property in a restored 19th century schoolhouse. Executive chef Robert Garcia, a sirloin star with stints J. Prime, Ruth’s Chris, and Bohanan’s, will bring a menu filled with prime steaks, A5 Japanese and Texas wagyu, and fresh seafood — including a raw bar.
The hotel group worked with the Historic Office of Preservation to maintain many of the building's original features like the original limestone walls, but squeezed plenty of tables into the blueprint. The restaurant boasts a two-level dining room and a private wine room, providing seating for 207 guests.
Those looking for a more casual experience can belly up to The Bar at Dean’s. Guests will immediately notice woven panels created by local conceptual artist Doerte Weber — made in tribute to the land, culture, and history surrounding the Kimpton Santo. In addition to serving the entire steakhouse menu, the watering hole has an exclusive “Dean’s List” featuring rare Bourbons and vintage wine bottles.
After dinner, patrons can retire to The Study at Dean’s for a nightcap. The spot, seating 78 between its lounge and shaded patio, specializes in high-end cocktails served with small bites like charcuterie, caviar, and smoked salmon tartlets.
Lastly, Tenfold Rooftop takes the hotel to new heights with an adventurous drink program specializing in tequila and mezcal. The culinary team paired the sippers with a curated 13-item menu. The internationally inspired bites will be available a la carte via a chef-selected prix fixe.
As previously announced, the 10-story property will feature 347 rooms, more than 10,000 square feet of event and meeting space, and a rooftop hotel. According to the release, the Kimpton Santo is on track for an August opening.
