Lauded chef debuts new restaurant in San Antonio's St. Anthony Hotel
Downtown San Antonio’s grand dame of hospitality is getting a new dining room. James Beard–nominated chef Leo Davila will open Esencia on February 4, bringing his globally influenced fare to the historic St. Anthony Hotel, 300 E Travis St.
As with all of Davila’s concepts, Esencia is deeply personal. The chef draws on his Chinese and Mexican heritage to create dishes, sometimes playfully riffing on his San Antonio home. His famous Big Red and barbacoa tacos not only nod to an Alamo City tradition but also to family history. During a soft opening service, a server said he incorporated watermelon radish because of his grandmother’s aversion to onions.
Other signature dishes include a Wagyu flank steak carne asada with potato pavé, avocado salad, Asian chimichurri, and heirloom corn tortillas; pork belly layered with apple and pasilla mole; and a tartare-style take on takeout beef and broccoli finished with miso aioli and rice paper.

Esencia’s beverage program mirrors the menu’s cross-cultural focus, featuring Asian spirits, tequilas and mezcals, Texas whiskeys, beers, and an extensive wine list. The cocktails are made with unexpected flavors like reposado tequila and gochujang syrup, lychee liqueur and rose water, and a smoked bourbon cocktail using a Garrison Brothers single barrel.
Inside, the decor couldn’t look more different from the space’s former occupant, Rebelle. Anchored by a stone fountain, the space has some Las Vegas sleight of hand with faux wrought iron terraces, olive trees , and a sunset-inspired ceiling mural by local artist Regina Moya. Towards the back, the interior echoes the east-meets-west menu with Chinoiserie dragon wallpaper and fretwork.
Esencia is Davila’s second concept in the historic St. Anthony Hotel. In April 2025, the property opened Anacacho Coffee & Cantina in the former home of Haunt. The bar and coffee shop recently made it to the James Beard Awards long-list of Best New Restaurant nominees.
Following the February 4 debut, Esencia will be open Tuesday through Thursday from 5-10 pm, and Friday and Saturday from 5-11 pm. Reservations are now available through OpenTable.
