San Marcos kolache favorite opens first New Braunfels shop

Dos Gatos opened its first New Braunfels bakery on December 15.
A beloved San Marcos mini-chain is giving Gruene’s breakfast scene a wake-up call. Dos Gatos Kolache Bakery debuted its first New Braunfels shop at 1164 FM 306 on December 15, serving up Texas’ favorite pastry and coffee near the rapidly growing historic district.
Brothers Seth and Chase Katz founded Dos Gatos in 2009 and have since grown the business into a hospitality group. Although their portfolio now includes popular haunts like Zelicks Icehouse, North Street Beer Bar, and Pie Society, the bakery remains the bakery’s bedrock.
The straightforward kolache menu is divided into two sections: Texas and Czech. The former are technically klobásník with proteins like chorizo, jalapeño sausage, pepperoni, and ham and cheddar wrapped with sweet dough. The Czech section covers the sweet pastries cradling peaches, raspberries, strawberries, apricots, and cream cheese.
Dos Gatos also dishes out a few other treats, like a cinnamon loaf and a pecan and chocolate cinnamon roll. Both can be paired with hot tea, cocoa, or espresso drinks like lattes, cappuccinos, or mochas.
The pricing is generally affordable, allowing patrons to treat coworkers to the occasional surprise box. Savory kolaches range from $3.05-$3.30, while their more sugary cousins are all $2, except for the $2.50 daily special made with fresh seasonal fruit. Most of the drinks are firmly under $5.
Still to come from the Katz brothers is the Hunter Road Country Club, being built next door to the new Dos Gatos. Despite the exclusivity hinted at by the name, the siblings envision the concept to be a neighborhood bar and grill. The build-out is expected to be completed in the first quarter of 2026.
Meanwhile, Dos Gatos is now open daily near Hunter Road. Hours are Monday through Sunday, 6 am-12:30 pm.
