Growing Chicago-style pizza chain slices into Stone Oak
Crust Pizza Co. is coming to Stone Oak without a deep-dish pie in sight.
After teasing a second area location in August 2025, Crust Pizza Co. is finally set to take another slice of San Antonio’s fast-casual market. The Woodlands-based chain has filed state plans to build a new 2,702-square-foot pizzeria at 20135 Stone Oak Pkwy.
The company previewed the outpost when it made its area debut in Cibolo, but never shared an estimated opening date. Now, new Texas Department of Licensing and Regulation filings say work on the interior will be completed in May 2025, although that date is subject to change.
The franchise has skyrocketed in Texas and Louisiana since opening its first pizzeria in The Woodlands in 2011. Although it offers stuffed and cauliflower crusts, it specializes in Chicago-style pies.
That designation may confuse locals who haven’t spent much time in the Illinois city. Instead of offering the iconic deep-dish casseroles favored by tourists, Crust serves the cracker-thin pies found at neighborhood taverns and generally preferred by locals.
Regardless of Crust’s crust, the pizza varieties cover the basics like Margherita, pepperoni, Hawaiian, Buffalo chicken, and the meaty Big Don’s. Perennial pizzeria favorites such as wings, meatballs, and pepperoni rolls round out the menu. Still, the chain also sneaks in a few surprises like blackened chicken pasta, tomato basil soup, and baked mac ‘n’ cheese with smoked mozzarella and Italian sausage.
Like its Cibolo sibling, the restaurant will be run by friends Derek Campbell, Nathan Robbins, and Jay Tompkins, who are also spearheading the brand’s Texas expansion. CultureMap has reached out to company reps for a more exact opening timeline.
