Chicago-style pizza chain serves up first San Antonio-area restaurant

Crust Pizza Co. is opening its first area restaurant in Cibolo.
The Woodlands-based Crust Pizza Co. is taking its own slice of San Antonio’s fast-casual market with the opening of its first area pizzeria at 813 Cibolo Valley #170 in Cibolo. The rapidly growing chain, known for its Chicago-style pies, will debut the restaurant on September 3.
The franchise has skyrocketed in Texas and Louisiana since opening its first pizzeria in The Woodlands in 2011. Still, those who don’t live in Illinois may not recognize the thin-crust pies as being Chicago-style.
Crust specializes in tavern pizzas, a style that is more popular in the Windy City than iconic deep-dish pizzas. Featuring a cracker-like crust and square slices, also known as the “party cut,” the style is wildly popular at bars and neighborhood restaurants.
The pizza varieties cover the basics like Margherita, pepperoni, Hawaiian, Buffalo chicken, and the meaty Big Don’s, adding in perennial favorite sides such as wings, meatballs, and pepperoni rolls. The chain also sneaks in a few surprises like tomato basil soup and baked mac ‘n’ cheese with smoked mozzarella and Italian sausage.
The Cibolo restaurant will be run by friends Derek Campbell, Nathan Robbins, and Jay Tompkins, who are also spearheading the brand’s Texas expansion. A location within San Antonio city limits is coming soon to the Stone Oak Mercantile development at Stone Oak Parkway and Canyon Golf Road, although the company has not revealed its opening date.
