Shark Tank-backed ice cream chain swirls into San Antonio
A Shark Tank-approved ice cream franchise is investing in San Antonio. Crispy Cones will open its first area location in the Northwoods shopping center at 18130 San Pedro Ave. on the North Side.
Crispy Cone’s signature is a hand-rolled pastry shell that is grilled rotisserie-style, dusted in cinnamon sugar or rotating coatings like salted caramel, then packed with soft serve and various toppings. The actual ice cream menu is relatively simple, with flavors like vanilla, chocolate, and specials such as maple doughnut.
Founder Jeremy Carlson was inspired to create the concept after a trip to the Czech Republic, where he encountered trdelník — or chimney cakes — a similar cone dessert served by street vendors in Prague. In its home country, the treat is open at both ends and can be a bit messy. Carlson solved the problem by coating the inside of the pastry with thick spreads like Nutella or strawberry jam.
The business started as a cottage operation. Carlson started selling the cones from a roadside tent in Rexburg, Idaho, in 2018 while still a freshman at Brigham Young University-Idaho. Soon, he graduated to a food truck, then a brick-and-mortar storefront.
Crispy Cones didn’t become a phenomenon, however, until Carlson and his wife, Kaitlyn, pitched the panel on the ABC reality program Shark Tank. The appearance resulted in a $200,000 investment from Barbara Corcoran, which the Carlsons used for a rapid franchising push.
Since then, the company has opened locations in more than a dozen states. It’s still a relative newcomer to Texas, having opened its first shop in the state in Dallas-Fort Worth suburb North Richland Hills in February 2025.
According to a newly filed Texas Department of Licensing and Regulation project file, the 1,233-square-foot San Antonio outpost is set to complete renovations in February 2027. A request for a more exact timeline was not immediately returned.
