Downtown San Antonio Bill Miller Bar-B-Q quietly closes after 54 years

Bill Miller Bar-B-Q is moving its HQ to the Far West Side.
Bill Miller Bar-B-Q is ubiquitous in the San Antonio area, but as of Friday, September 12, it won’t be slinging sausage wraps downtown. The 430 S Santa Rosa Ave. outpost at the company’s headquarters is quietly shuttering as the chain prepares to move to a $60 million campus on the Far West Side.
The closing was first noticed by an eagle-eyed member of the popular San Antonio Restaurants Facebook group. Bill Miller has not made a public statement other than posting a sign thanking customers for their “loyal support.”
Bill Miller opened their headquarters in 1971 with a restaurant that also acted as a commissary kitchen supplying other locations with baked goods and sausages. It was the last downtown location of the chain after it closed its 501 N St Mary’s store during the pandemic.
The company did not share the reason for the closure. Although decreased access from ongoing construction no doubt affected the bottom line, it is more likely the result of Bill Miller moving operations to 5330 State Highway 151.
Plans for the massive facility were first revealed with a state project listing in 2020 and kicked off in 2021. The building, which is already partially utilized, will include a dual-level kitchen, truck docks, and space for office staff.
Bill Miller last updated locals on the construction progress in summer 2024, with an X post showing the beams being laid. It’s unclear if the facility will have a public-facing component.
“Laying the foundation for a new chapter,” wrote a company rep. “Our new headquarters will include a smokehouse where the fires burn in the basement level and meats are smoked on the second level BBQ pits!”
Bill Miller Bar-B-Q currently operates almost 80 restaurants across Central Texas and the Hill Country. The closest restaurant to the shuttering downtown spot is at 1030 E Cesar E Chavez Blvd.
