New sparkling wine tasting room puts stamp on Hill Country post office

Rebecca Caroline sparkling wines are now pouring at William Chris.
William Chris Wine Company is putting a stamp on downtown Hye. The Hill Country winery is opening a new tasting room inside the historic Hye Post Office at 10261 US-290 to showcase its new sparkling wine brand, Rebecca Caroline.
The Rebecca Caroline tasting room, set to debut in the summer, is located inside one of the Hill Country town’s most famous landmarks. Hiram “Hye” Brown, the town’s namesake, built the structure in 1904 from designs he scouted in a catalogue.
According to local lore, President Lyndon B. Johnson mailed his first letter there when he was only four years old. 50 years later, he swore in his new Postmaster General, Lawrence F. O’Brien.
More recently, the post office has served as a general store and restaurant. In a release, William Chris says it will honor that Texas heritage while introducing a “refined, whimsical aesthetic” that will showcase the popular winery’s latest Texas-grown brand.

“As a family business, legacy is at the heart of everything we do,” said Chris Brundrett, William Chris Wine Company co-founder and CEO, in a release. “We grow, harvest, and craft wines with future generations in mind. Sparkling wine is one of the most exciting and fastest-growing categories in the country — and we’re bringing it to Texas.”
Rebecca Caroline, named for the combined middle names of co-founders Chris and Katharine Brundrett’s daughters, maintains the winery’s commitment to solely using Texas-grown grapes. And it also comes with the new R.C. Express Wine Club, a limited sparkling release membership program inspired by the Pony Express.
But guests don’t have to wait for the summer tasting room debut to get a first sip of the brand. The R.C. Cellar Experience at William Chris Vineyards, offered Friday through Sunday by reservation, offers an inaugural 90-minute tour of Rebecca Caroline’s first wines.
