San Antonio chef Jason Dady opens new crawfish pop-up at La Cantera
Crawfish season is coming early at the newest Jason Dady pop-up.
Whatever day planner chef Jason Dady uses to juggle multiple restaurants, we want in. The San Antonio celebrity chef is launching CrawDady at The Rock at La Cantera on February 21, adding to an already stacked list of new and upcoming concepts.
The spring pop-up at Frost Plaza will serve made-to-order catfish boils in four flavors: dry Cajun, featuring a signature spice blend; wet Cajun, with butter and Frank’s Red Hot, and a secret seasoning; Viet-Cajun, with ginger, lemongrass, and “Funky Butter”; and Italian garlic herb.
The shareable sides take their cues from classic Southern fare. Bites include boudin balls with a grain mustard remoulade, boudin sausage links, and jalapeño-white Cheddar hushpuppies topped with Kewpie mayo and lime. For brisker days, guests will want to dive into the chicken and sausage gumbo served over bay leaf rice.
Dady will kick off CrawDaddy with an all-day party on January 21, starting at 1 pm. The event will feature live music from Aaron Montano-Teague, refreshments, and a San Antonio Spurs vs. Sacramento Kings watch party at 7 pm. Dady’s other Rock concepts, Lil’ Bros BBQ Shack, Ice Ice Dady, and Roca & Martillo, will also be dishing out treats. Entry and parking are free.
CrawDady adds to the growing list of concepts under the chef’s name. In addition to opening Lil’ Bros and Ice Ice Dady in 2025, Dady also revived his Umai Mi concept, reinventing the restaurant into a quick-service stand at Pearl’s Bottling Department food hall.
In April, he is also set to debut his most ambitious project yet. Mexico Ceaty, inside downtown’s Shops at Rivercenter, will reimagine the mall food court with four new concepts, including Mexican restaurant Tres Arcos, 300-seat bar Dos Cantinas, speakeasy-style agave tasting room El Último, and panadería Dulce Aroma.
CrawDady will be open throughout the spring season, although a press release did not clarify its final day. Hours are Friday, 11 am-10 pm; Saturday, 11 am- 11 pm; and Sunday, 11 am- 8 pm.
