This simple recipe for a comforting Tex-Mex favorite pleases a crowd
In this new video series called Dinner Reinvented, Roni Proter (who is also our host for Cup of Content) puts together an easy chicken enchilada recipe. It feeds a hungry family or a crowd for a casual dinner party.
Proter starts with a bowl of shredded rotisserie chicken, to which she adds a little store-bought enchilada sauce. She also puts some of the sauce in the bottom of a casserole dish, to prevent the tortillas from sticking while the enchiladas are cooking.
Back to the filling. To the chicken mixture she adds shredded sharp cheddar cheese, a generous sprinkling of taco seasoning, chopped onion (about half an onion's worth), and 8 ounces of light sour cream.
She fills each of the flour tortillas with a dollop of filling and places them in the dish. Then she adds the remainder of the sauce, some more shredded cheese, and pops the entire thing in an oven preheated to 375 and bakes for 30 minutes.
