This four-course dinner will include honeydew melon with jamon iberico, mint, and citrus foam; fresh scallop with brown butter almond mascarpone and salmon roe; seared tuna with onion marmalade, charred grapes and grilled scallion; quail with brussels sprouts; spice rubbed elk with smoky blue cheese mashed potatoes and blood orange cheesecake with graham cracker tuile and pandan anglaise.
