Hyatt Regency Hill Country Resort and Spa invites guests to experience a romantic, four-course Valentine’s Day Dinner inspired by the beauty and bounty of Texas ranches at its signature restaurant, Antlers Lodge. Named for the stunning chandelier created from 500 sets of naturally shed antlers, Antlers Lodge creates a rustic, elegant atmosphere for guests to take in the striking views of the surrounding Hill Country.

The four-course dinner begins with a balance of delicate and rich flavors, with a choice of a pan-seared lamb lollipop with rosemary mint gastrique, fresh dungeness crab dip with brioche toast, or pickled yellow beat carpaccio with baked goat cheese and tarragon orange oil. The intimate meal continues with a choice of decadent cauliflower soup with brown butter, or wild arugula salad with honey-kissed persimmons, pomegranate and boar bacon.

Guests will continue onto the savory third course with dishes like seared gulf snapper with braised fennel and chimichurri, and a perfectly grilled ribeye with herb-roasted fingerling potatoes and house steak sauce. The romantic dinner will end on an indulgent note with a choice of pistachio strawberry mousse cake with chocolate sauce, or a chocolate bowl filled with fresh strawberries and chocolate mousse.
